Gluten free, low GL, nutrient packed bread recipe!
This bread is so delicious, that, having baked it on a Sunday evening, it hardly made the breakfast table!
It has also a low glycemic index (no grains in it), it is gluten free, it has plenty of essential fatty acids, in particular omega-3, great for cardiovascular and brain health, it is rich in magnesium, calcium, vitamin E and plenty of fibre! It makes you think when most shop bought bread is rather nutrient depleted and has high glycemic index.
It is also so quick and easy to make, a true winner.
Ingredients (for a small loaf):
- 180g ground almonds
- 40g ground flax seeds (you can grind them yourself with a coffee grinder, or buy them already ground)
- 1 tbs whole flax seeds
- 1/2 teaspoon celtic sea salt (unrefined sea salt)
- 1/2 teaspoon baking soda
- 4 eggs, beaten
- 1/2 teaspoon raw apple cider vinegar
- a handful of sundered tomatoes, thinly chopped or quickly ground in a food processor
- 1 teaspoon of rosemary
- 1 teaspoon of oregano
- 1/2 teaspoon of thyme
How to make it:
Mix all the ingredients together until combined, then pour into a greased standard sized loaf mould (i recommend the ones made of silicon) and bake at 200 C for about 50 minutes, or until a toothpick inserted into the bread comes out clean.
Cool before serving.
Enjoy on its own as a nutritious low GL snack or put your favourite savoury toppings on it.
